• 1 medium NC sweetpotato • 2 tablespoons Greek yogurt • 1 teaspoon harissa oil, or to taste Sweetpotato Toast with Soy, Scallions & Cashews • 1 medium NC sweetpotato • 1 tablespoon soy sauce • 3 scallions, cut in half and grilled • cashews, for garnish Directions 1. Slice sweetpotato lengthwise into planks about ¼ inch thick. Note: place in microwave for 10-15 seconds before cutting to make slicing easier. 2. Place in toaster (or toaster oven) on high. Toast twice. If using a toaster oven, toast for about 4 minutes, then flip before toasting again. 3. Allow to slightly cool and top with desired ingredients.
