Talking Points y July is a great month for gatherings, barbecues and of course, 4 th of July celebrations. It’s important to practice food safety at large gatherings and when cooking food outside. Our July monthly handout tip discusses safe internal temperatures for meats and how to utilize food safety tips this summer. Discard any food left out more than 2 hours (1 hour if the temperature outside is above 90º F). y No matter what you’re cooking for your 4 th of July holiday, sweetpotatoes pair nicely with any grilling combination. Cool down your kitchen by grilling your sweetpotatoes, which creates a sweet and creamy taste on the inside and a crunchy, charred texture on the outside. Perfectly delicious! To grill, just marinate your sweetpotatoes and cook with the cover down until they reach desired crispness. One simple marinade option we love is water, olive oil, salt, pepper, and garlic. y Sweetpotato salads and smoothies make for “cooler” summer side dishes. To best utilize food safety practices, keep cold foods cold and warm foods warm, and do not cross-contaminate raw meats with other ingredients. Sweetpotatoes have a low risk of food borne illness if properly mixed with other ingredients. Once cooked, sweetpotatoes can last 3-5 days in an airtight container in the refrigerator to be used as leftovers.

Add grilled sweetpotatoes to your summer meals to enhance flavor, nutrients and the fiber content of the dish. To grill sweetpotatoes, lay sliced sweetpotatoes on a hot grill and cook each side for 4-6 minutes, or until they have grill marks and are cooked through. For extra flavor, season them with your favorite marinade or serve them with a dipping sauce, like BBQ sauce, ketchup, mustard, honey mustard, or your own favorite combination.
