No Bake sweetpotato pie bites

Ingredients • 1 cup pecans • 1 ½ cups oat flour (oats ground into flour) • 1 tsp pumpkin pie spice • ½ tsp fine sea salt • ⅞ cup cooked and mashed NC sweetpotato • ½ cup pure maple syrup • 1 Tbsp vanilla extract • Cinnamon sugar, for rolling Directions 1. Place the pecans in a food processor and process to the texture of coarse sand. Add the oat flour, pumpkin pie spice, and sea salt and pulse until combined. 2. Add the mashed sweetpotato, maple syrup and vanilla extract and process until all ingredients are evenly incorporated and the mixture clumps together into a dough. 3. Shape dough into small balls (about ¾ ounce each, or the size of a ping-pong ball) and roll in cinnamon- sugar to coat. 4. Store mini muffins in an airtight container for best results. If needed, roll in cinnamon sugar again before serving.
