Sweetpotato Rounds

Ingredients • 2 NC sweetpotatoes, cut into rounds • 3 Tbsp cooking oil (+ more to coat baking sheet) • ⅛ tsp black pepper • 1 tsp fine salt • ½ cup pomegranate arils (or dried cranberries) • 2 Tbsp chives or basil, chopped (fresh or dried) • Drizzle of pure maple syrup • Sea salt and fresh ground pepper (optional, to garnish) Directions 1. Preheat the oven to 425°. Use a silicone brush to coat two rimmed baking sheets with avocado oil. 2. Coat sweetpotato rounds with 3 tablespoons of oil on all sides and arrange in a single layer on baking sheets. Sprinkle with pepper and bake at 425 degrees Fahrenheit for 15 minutes. Flip each round and bake another 5 minutes until golden brown and crispy on the outside. Remove from the oven and sprinkle with fine salt. 3. While the sweetpotatoes cook, use a toaster oven and preheat to 350° degrees Fahrenheit. Arrange nuts in single layer on a bare baking sheet and bake for 5 minutes until golden brown and fragrant. Alternatively, you can roast them in a pan with oil over medium-high heat for 4-5 minutes, shaking them often to prevent burning. 4. Top each round with 1 tablespoon of ricotta cheese or yogurt. Add the pomegranate arils or cranberries, toasted nuts, and fresh or dried herbs on top. Next, drizzle a tiny amount of maple syrup and sprinkle sea salt and freshly ground black pepper. Serve and enjoy immediately. • ¾ cup nuts of choice (optional) • ¾ cup ricotta cheese or yogurt
