sweetpotato cornbread

Ingredients • ¾ cup all purpose flour • 1 ¼ cups yellow cornmeal • 1 Tbsp baking powder • 1 tsp salt
Enjoying Thanksgiving with Diabetes While you do need to have some awareness of your food choices when you have diabetes, it doesn’t mean that you can’t enjoy your favorite foods at Thanksgiving or other holidays. Holidays are often decorated with family recipes, which bring feelings of nostalgia. With some of the tips below and a plan of action, you can enjoy your Thanksgiving holiday while managing your diabetes. 1. Load up on non-starchy vegetables 2. Eat breakfast in the morning
• ½ cup sugar • 1 ¼ cup milk • 2 Tbsp oil • 2 eggs, lightly beaten • ½ tsp cinnamon • ½ tsp nutmeg • ½ cup NC sweetpotatoes, baked and mashed
Directions 1. Preheat the oven to 450° degrees.
2. In a large bowl, sift loosely the dry ingredients. 3. In a separate bowl, combine eggs, oil and milk. 4. Add the sweetpotatoes and mix well. 5. Add the sweetpotato mixture to the dry ingredients and mix until combined, being careful not to over mix. 6. Pour into a greased nine-inch-baking pan or spoon into a 12-cup muffin tin. 7. Bake at 450° degrees for 20 minutes or until the cornbread is golden.
